1/2 cup extra virgin olive oil
1/3 cup apple cider vinegar
1/2 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried rosemary
1 head broccoli, chopped into florets
1/2 head cauliflower, chopped into florets
1 cup ham, cubed
1/2 cup salami, chopped
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
8 oz mozzarella cheese, cubed
Kosher salt and freshly ground black pepper, as needed
Parmesan, freshly grated, as needed
In a large bowl, whisk together the olive oil, vinegar, garlic powder, thyme, oregano, rosemary, and salt and pepper until incorporated.
Add the broccoli, cauliflower, ham, salami, tomatoes, olives, and mozzarella, and toss to coat.
Chill until ready to serve and garnish with parmesan cheese, if desired. Enjoy!
