Gluten Free Waffles

Ingredients:

1 cup rice flour, brown or white

1/2 cup potato starch, not potato flour

1/4 cup tapioca flour

2 tsp baking powder

1 tsp salt

1/4 cup oil

2 egg, optional (see notes)

1 1/2 cup buttermilk, or regular milk

1 tsp sugar

 

Gluten Free Waffles

 

Directions:

Mix all ingredients together with a whisk. If batter is too thick, add a bit more milk. If it’s too thin, add a little rice flour.

Cook in batches in a waffle maker.

Note: these can be made without eggs – just add a little more liquid to make up for them.
